Red should be served at room temperature, however, room temperature in Europe is different from Hong Kong(which judged from your ip seems to be the case)especially during summer. But adding ice will also dilute the wine, as such it is wrong.

Red should be have ice bath
but should not add ice directly into the wine

記得以前看過一本書講過一件事:

當時(其實係早3,4年左右)有不少外國酒商都評論中國的有錢人是加冰甚至加七喜飲LAFITE的,
認為是暴殄天物.

當一名LAFITE酒莊的負責人問被及此事時, 他笑說著回答:

無論加甚麼去飲, 對他們來說都是一個新的開始, 慢慢地他們會學懂怎樣去飲用的了.



當然紅酒加甚麼去飲或者雪凍飲都是不正規的, 理論上一支紅酒在17~20度之間就最能夠發揮出最好的味道.
不過, 很多時飲一支酒都不會太講究的.
